PUMPKIN LOAF

 A great last-minute of food is always welcomed by the receiver. Who doesn't like yummy treats?
This Pumpkin Loaf is quick to mix together and can bake slowly while you finish wrapping up your gifts. 

I got my inspiration from Nancy at the blog Like Mother Like Daughters
 although I did change a few things about the recipe that I felt made it fit my taste buds a little better, but be sure to check out her recipes too!  

 You will need 
  • 1 1/2 cups of flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  •  1 teaspoon cinnamon
  • 1 teaspoon ginger
  • 1/2 teaspoon allspice
  • 1/2 cloves
  • 1/2 teaspoon salt
  • 4 eggs
  • 1 cup sugar
  • 1/4 cup brown sugar
  • 1 teaspoon vanilla    
  • 1 cup pumpkin puree
  • 3/4 canola oil      
  • toasted pumpkin seeds if desired ( I didn't have any! *sad face*) 

  Preheat oven to 350 Fahrenheit, combine dry ingredients and spices in a bowl and set aside, combine sugar , eggs, and vanilla in a mixer for 20 -30 seconds. Mix in pumpkin and oil and stir in well. Add in dry ingredients and mix all ingredients together.

Pour into a greased loaf pan and bake for 60 minutes or until toothpick or butter knife (your preference) comes out clean when placed in the middle. 
 
Once it cools wrap it up in some plastic wrap and tie a ribbon on it and voila! You have a simple yet totally yummy last minute gift!
