A few months ago I had decided to cut Gluten out o my diet for a while to see if it would help with some health issues I've been having. Well, it hasn't or at least hasn't made a huge difference, so the next on my list of possible food sensitivity triggers is Dairy. I know, DAIRY like I can handle a lot of things but take away my cheese and creamy sauces and we have major issues. So I am of course determined to eat good tasty food while I'm experimenting with the break from dairy.
In cooking, spinach and tomatoes are some of my most favorite ingredients to use. They have so much flavor and can add a great taste to many dishes. I modeled my wrap after the one you can find at Starbucks. The Spinach Feta Wrap, which if you can have it, it's delicious! But since I can't and I would be breaking my no dairy only a short time in.....Anyway on to the recipe, shall we?
Ingredients:
- GF Tortilla
- Baby Spinach
- 1/4 Tomato
- Handful of DF cheese (I like the daiya because it melts!)
- Just a hint of lemon juice
- Salt, Pepper and Garlic
- 2 eggs fried or egg whites or egg substitute
